In my grandmother’s house in Kyoto, the rice was washed for the next day’s dinner before she went to bed. She would take a measured cup of short-grain rice from the wooden bin, pour it into a bowl, cover it with cold water, swirl it gently with one hand, drain the milky water, and repeat. Four or five rinses. Then she would cover the rice with fresh water, leave it on the counter to soak through the night, and only in the morning, ten or twelve hours later, put it into the pot to cook. The rice was not hurried. It was prepared.

This was not, in her mind, a step worth commenting on. It was simply how rice was made. The ritual was so old that it was invisible. Only when I left home and started cooking for myself did I begin to understand that her bowl of rice tasted different from most other people’s bowl of rice, and that the difference began the night before.

What soaking and rinsing actually do

Whole grains (rice, wheat, oats, barley, millet, sorghum, buckwheat, and others) are seeds. Like all seeds, they have a hard outer protective layer designed to keep them intact until conditions are right for germination. That outer layer contains compounds (called anti-nutrients in some literature, though the term oversimplifies) that protect the seed from being digested by animals or sprouting prematurely. Among these are phytic acid, certain tannins, and various enzyme inhibitors. Their job is to keep the seed asleep.

Soaking the grain in water for several hours partially neutralises these compounds. The seed begins, gently, to wake up. Enzymes inside the grain become active and begin breaking down starches and proteins into simpler forms. The hard outer layer softens. The overall result is a grain that is easier to cook, easier on the digestion, and (in many traditions) tastes more clearly of itself.

Rinsing serves a different purpose. Modern rice is often coated in a layer of starch dust from milling. Rinsing washes this away, which keeps the cooked grain from being gluey. The first water that comes off washed rice is milky white; by the fourth or fifth rinse, it runs almost clear. That is the signal that the grain is ready to soak.

The grains and their habits

Short-grain rice

The Japanese short-grain rice my grandmother used benefits from a thorough rinsing (until the water runs almost clear) followed by a soak of at least thirty minutes, ideally an hour or more. Some households soak for several hours or overnight. The result is a cooked rice that is sticky but distinct, each grain glossy, the bowl carrying the slight sweetness that overnight soaking brings out.

Brown rice and other whole rices

Brown rice still has its bran layer intact. It takes much longer to cook than white rice and benefits enormously from an overnight soak. Some traditional practices soak it with a small amount of acid (a spoonful of lemon juice or apple cider vinegar in the soaking water) which is said to further soften the outer layer. After soaking, the rice is rinsed once more before cooking.

Whole wheat berries, barley, farro, spelt

These large whole grains are almost impossible to cook well without soaking. An overnight soak (eight to twelve hours) reduces cooking time by half or more and produces a tender chewy grain rather than a stubbornly hard one. Drain the soaking water and use fresh water to cook.

Oats

Steel-cut oats and whole oat groats benefit from an overnight soak as well. The famous Scottish breakfast oat porridge was historically made by soaking the oats in salted water overnight on the back of the stove, then cooking them the next morning. The result was a creamier porridge with much less stirring required.

Millet, sorghum, quinoa, buckwheat

These smaller or less-common grains often have a slightly bitter outer coating (saponins on quinoa, in particular, which is why it needs thorough rinsing). A short soak of two to four hours plus a good rinse improves their texture and flavour considerably.

Why this small step has disappeared in many kitchens

Modern packaged rice and grains are often marketed on convenience. Five minute rice. Instant oats. Quick barley. The promise is that you can pour a bag into a pot of boiling water and have a side dish in fifteen minutes. This is true. It also produces a grain that, compared to the slowly soaked version, is a thinner and less interesting food.

Part of the reason traditional cuisines built so many of their most enduring recipes around long-prepared grains (the bowl of overnight rice, the soaked porridge, the slow-cooked farro salad) is that the longer preparation produces a deeper flavour. A grain that has been allowed to soak overnight tastes more clearly of grain. A grain that has been cooked too quickly tastes more like a vehicle for whatever sauce is on top.

This is one of the small everyday places where slow cooking principles show up at the grain level. The same idea, played out in a smaller vessel and on a shorter time scale, is at work in the soaked bowl on the counter.

What unites them is the central place of the grain. In each of these cuisines, the grain is not a side dish. It is the foundation, and everything else (the vegetable, the protein, the herb) is built around it. The care taken to prepare the grain matters because the grain is the meal.

This is also one of the threads that runs through traditional food practices generally. The household pays serious attention to what most cultures would have called the staple. The flour for the bread, the rice for the bowl, the milk for the curd, the bean for the pot of slow stew. The staples are not afterthoughts. They are the daily food, and the daily food deserves the time it asks for.

The smell of the morning bowl

There is a particular smell to a bowl of rice that has been soaked overnight and then cooked slowly the next day. It is hard to describe to someone who has not encountered it. Slightly sweet, faintly grassy, faintly nutty, with no sharpness. The grain has, somehow, become more itself than it was the night before.

The same is true of overnight oats, of soaked barley, of long-prepared millet. Each of these reaches a different note than its hurried version. To start eating grains this way is to slowly recalibrate one’s sense of what these foods can taste like. After a few weeks, the quick version begins to seem oddly thin.
