Sun drying food: a roof, a sheet, patience
Long before dehydrators, every flat surface that could see the sky was a tool. Roofs, terraces, courtyards, and clean cotton sheets.
From the train between Nara and Kyoto in late autumn, you sometimes see them on the roof tiles of older houses: small bamboo trays of orange persimmons hung in rows, drying slowly in the cold dry air of November. They will turn into hoshigaki over a month or so, the surfaces becoming dusted with a fine pale bloom, the flesh inside concentrated to something between a fig and a caramel. No machinery. No instructions, exactly. Just a tray, a string, a north wind, and someone who knows which fruit to choose.
I have seen the same instinct in different climates. Tomato halves on terracotta tiles in Calabria. Apricots on cotton sheets on a flat roof in Anatolia. Strips of chili threaded along a string in a New Mexican courtyard. Each culture, working out the same logic in its own materials: the sun is reliable for a few months a year, and we can put it to work on the food.
What sun drying actually does
Most fresh foods spoil because they contain a lot of water, and most spoilage organisms need water to live. Take the water out, and the food keeps. Salt, sugar, and acid all preserve food partly by binding water; drying does it more directly. A ripe tomato is about ninety-five percent water. A sun-dried tomato is about fifteen percent. The difference is what keeps it on the shelf through winter.
The sun is a remarkable drying tool when you have it. Direct sunlight provides heat, dry air carries the moisture away, and a steady breeze keeps the food from sitting in its own evaporated vapour. The work is slow, especially compared to electric dehydrators or low ovens, but the result is often subtly different. Slow-dried food has a particular concentrated flavour, partly because some browning reactions happen at the lower temperatures, partly because the structure of the food has more time to settle.
In many cultures, the drying floor was the roof itself, swept clean each morning of the season. In others, it was a wooden frame stretched with cotton, set up in the courtyard. In yet others, food was hung from beams under the eaves so it caught air but not direct sun, which was important for foods that would lose colour or fat in full light.
What gets dried, and why
Some foods are obvious candidates. Grapes become raisins. Plums become prunes. Apricots, figs, dates, and persimmons travel the same path in different climates. The fruit’s natural sugar concentrates as the water leaves, and the result keeps for months.
Less obvious are the savoury versions. Tomatoes split, lightly salted, and laid out to dry until leathery. Aubergines hollowed out and dried whole, so they can be reconstituted and stuffed later. Peppers strung in long red garlands and hung from kitchen rafters. Yoghurt, drained and salted, then formed into small balls and dried on cloths. Each of these is a way of taking a summer abundance and bringing it forward into winter.
Then there are the staples. Whole grains, of course, are dried by their nature, harvested at the end of the field and stored. But also herbs, spices, mushrooms, fish, certain meats, certain greens. In the Himalayas, leafy greens are dried in shaded racks under house eaves so that the family can have a vegetable dish in February when the gardens are buried in snow. In coastal Japan, fish is split, salted, and dried in cold sea air, then grilled briefly over a flame at breakfast.

The discipline of the drying season
What surprises most beginners is how much attention sun drying requires, despite seeming passive. You must bring the food in before the evening dew. You must turn it once or twice a day. You must check for insects. You must protect it from sudden rain. A wet morning can spoil a whole tray. A careless overnight can introduce mould.
This is part of why drying so often happens in cultures with predictable dry seasons. The Mediterranean late summer, the Central Asian autumn, the Indian post-monsoon, the high Himalayan winter when the air is cold but the sun is bright. Each climate offers its own window of weeks, and households moved their drying calendars accordingly.
In more humid places, drying happened indoors near a fire, or in well-ventilated lofts above kitchens. The principle was the same: warm air, low humidity, and patience. The means were what the local building offered.
The flavour of slow drying
Anyone who has compared a sun-dried tomato to a dehydrator tomato knows there is a difference, even if it is hard to name. The sun-dried one is darker, deeper, sometimes slightly chewier. It has caught a few days of weather. The fast-dried one is more uniform and a little flatter in flavour. Neither is wrong; they are simply different products.
The same is true of apricots, persimmons, herbs, peppers. The faster you take the water out, the more the food tastes like a slightly thinner version of its fresh self. The slower you take it out, the more complex the new flavour. This is part of why traditional dried fruits, made over weeks rather than hours, are so prized in many cuisines. The Iranian dried mulberry, the Turkish dried fig, the Japanese hoshigaki, the New Mexican chili ristra: each is a product of weeks, not minutes, and the taste reflects that.
The technique fits naturally into the rhythm of seasonal living. When the market is overflowing with one ingredient in August, drying is a way of bringing some of it into December. When you go to the cupboard in February for a handful of dried fruit, the August afternoon is, in a small way, still there.
Bringing the practice home, even partly
Most contemporary households do not have a flat clean roof or a windless courtyard. That is fine. The instinct can still find a place. A balcony tray of herbs on a hot summer week. A windowsill rack of orange peels in winter. A small electric dehydrator used occasionally, treated as a slow tool rather than a fast one.
Pair this with the other slow food practices of a household, the pickled jars, the crock in the corner, the cupboard of dried herbs for evening infusions, and you have, between them, a small year-round pantry that owes very little to the freezer.
It is not, of course, that drying replaces all of these. It is that, taken together, they reflect an older arrangement with a year. Each season has its work. Each season leaves something for the next.
The trays of hoshigaki on those Japanese rooftops are not a re-enactment. They are still working. Some families have made them every November for generations, the trays brought down each spring and stored away again, the persimmons given as gifts in December. The sun, on cooperative years, does its part. The household does the rest.
You only have to step into the cool air of an autumn evening, lift a tray off the line, and bring it inside before the dew settles. The food, by then, has done what it came to do.
